Eggs Mimosa

Ingredients:

+4 fresh eggs

+1/2 bunch of parsley

+ 2 pieces of fresh tomatos

+mâche

Dressing:

-1 egg yolk

-1 tablespoon of mustard

-1 teaspoon of vinegar

-20 cl of sunflower oil

-Salt ,pepper

Instructions:

-- Place eggs to cook for 10 minutes in salted hot water. Wash the mince and chop the parsley

-- Make Mayonnaise

-- Peel the eggs, cut them in half, separate yolks from whites, move the yellow stamen in the colander.

-- Reserve a small amount of yellow for the decor, mix remaining and parsley with mayonnaise, arrange the pocket and sprinkle with the remaining of egg yolk and parsley.

-- Arrange the salad on a plate or dish with a setting of your choice, put the vinaigrette over the salad just before servin.
